Product Description
Used in beverages and food as a sugar alternative, Aspartame is an artificial sweetener. Its perceived sweetness is caused by its binding of the heterodimer G-protein. This non-saccharide sweetener differs from beta aspartame on the basis of carboxyl group that binds to phenylalanine. Its sweetness is about 200 times that of sucrose and hence it has negligible caloric contribution. In the conditions of higher pH or temperature, Aspartame might hydrolyze (break down) into its essential amino acids, hence becoming unsuitable for use as a baking sweetener.
